We’re continuing to eat our way around the world, from the convenience of our own kitchen. Here’s how it works: each month a new eat2explore subscription box arrives in our mailbox, containing recipes from another country. This month we stuffed our faces with food from Mexico.
In the Kit
Each eat2explore subscription box features a specific country (or region). Inside the box, you always get information about the location, recipes for three meals, spices and seasonings, a cooking tool, and a cute flag pin. You’ll also get a shopping list so that you know what groceries you need to buy. Because the spices are included, the other ingredients can easily be found at any grocery store.
The Mexico box contained all of the spices required to make the meals taste authentic. The tool was cool, too. My teenage daughter was smitten with the avocado slicer. It proved helpful for making our Mexican meal, and has been subsequently useful in prepping her favorite breakfast, avocado toast.

In the Kitchen
eat2explore encourages kids to learn about new places through food. It’s also gets families into the kitchen to cook together. We’ve now tried several eat2explore boxes and the skill required varies by box, and by recipe. Some are more complicated than others. We found the Mexico recipes to be pretty easy to prepare. My 8 and 13-year-old could handle most of the steps without adult assistance.
The Mexico box contained recipes for Vegetarian Black Bean Enchiladas, Steak and Vegetable Fajitas with Guacamole and Lime Crema, and Beef Tacos. All recipes have modifications allowing them to be prepared vegetarian. All of the dishes were gluten-free. The spice packets included were the Cha-Cha Enchilada Sauce, the e2e Chili Mix, Fiery Fajita Spice and Taco Tuesday Mix.
Family Feedback
We’ve made enchiladas, fajitas and tacos many times at our house. The eat2explore recipes were variations of what we might typically make on our own. Thanks to the spice and seasoning packets, the meals were more flavorful than what we usually make. The recipes also incorporated vegetables that we don’t normally use, like broccoli in the enchilada recipe. We enjoyed eating all of the dishes, but we didn’t really experience anything new from a taste perspective. We did learn new information about Mexico’s culinary history through the informational materials in the box.
